Their Rye small grain Kentucky Straight Bourbon Whiskeys are offered as a Small Batch, up to 12 barrels per batch, which was the result of one fermenter. The goal of the Small Batch is to capture the total essence of more complex notes from multiple barrels from distillate of the same fermenter. We’ve decided to release the Small Batch Bourbon as a Bottled in Bond so fans of our Wheated Single Barrel Bourbon can do a side-by-side comparison.
Nose: The nose opens with heavy floral vanilla, soft caramel, a touch of dark stone fruit, grains like young rye and sweet corn, earthy baking spices, and faint charred oak in the back with some very light alcohol.
Palate: The palate opens viscous with caramelized peanuts fading to deep brown sugar and peppery earthy rye spice mixed with dried cherries, a touch of zesty citrus, and some charred oak spice on the back of the tongue.
Finish: The finish opens with lingering peppery spice on the palate before fading to the zing of malted barley, burnt caramel, and charred oak. These fade into a long herbaceous and malty aftertaste.
Wilderness Trail Bottled in Bond Small Batch Bourbon marks the third whiskey release for the Danville, KY based distillery. This small batch bourbon release uses rye instead of wheat as the secondary grain -- 64% corn, 24% rye, 12% malted barley. The corn and rye are grown by a local farm and the grain bill uses a sweet mash rather than a sour mash like many bourbons use. Each batch is made from 10-12 barrels. Bottled without chill-filtration at 100 proof.
